Foodie Friday – Fruit Scones

Who doesn’t love a scones! Just serve them fresh and warm from the oven with a serious amount of really good butter. But if you are feeling naughty serve with lemon curd and thickened cream.

Ingredients:

225g self-raising flour

1 tsp baking powder

Pinch of salt

55g butter

50g sultanas

25g caster sugar

150ml milk (100ml milk, 50ml single cream)

Preheat the oven on Hot Air Humid to 200°C

Mix the flour, salt, sugar and baking powder in a bowl. Rub in the butter until the mixture looks like breadcrumbs. Mix in the sultanas

Mix ¾ of the milk to form a soft dough, add the rest bit by bit as you may not need it all

Turn out onto a floured surface and knead lightly

Flatten the dough to 2cm thickness

Cut out your scones using a cutter, use all the dough

Bake for 12-15 minutes, golden in colour
